Grilled Greek Salad Pizza

Ingredients

  • ½ cup pizza sauce
  • 1 Grilled Pizza Crust (from Grilled Pizza Crusts recipe)
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup packed spinach
  • 2 Roma tomatoes, thinly sliced
  • ¼ red onion, thinly sliced
  • 1 cup quartered artichoke hearts
  • ½ cup halved pitted kalamata olives
  • ⅓ cup sliced pepperoncini peppers
  • ⅓ cup crumbled feta cheese
  • 1 Tbsp chopped fresh dill
  • 1 Tbsp balsamic vinegar

Instructions

  1. Preheat grill to medium-high heat.
  2. Spread pizza sauce over cooked side of grilled crust; sprinkle with 1 cup mozzarella.
  3. Arrange spinach, tomatoes, onion, artichoke hearts, olives, pepperoncini peppers, and feta over crust.
  4. Sprinkle with 1 cup mozzarella.
  5. Place on grill rack; cover and grill 5 to 6 minutes or until cheese is melted and bottom of crust is browned.
  6. Sprinkle with dill; drizzle with vinegar.
