Barbecue Pulled Pork Pizza

Ingredients

  • 2 Tbsp butter
  • 1 sweet onion, thinly sliced
  • 1 (8-oz) pkg sliced baby bella mushrooms
  • 6 cups chopped collard greens
  • 1 Tbsp apple cider vinegar
  • ½ tsp crushed red pepper
  • 1 Grilled Pizza Crust (from Grilled Pizza Crusts recipe)
  • 2 cups shredded mozzarella cheese
  • ½ lb chopped smoked pork (see Note)
  • ½ cup vinegar-based barbecue sauce
  • 3 Roma tomatoes, thinly sliced
  • 1 cup shredded Havarti cheese (or use Parmesan)
  • 4 green onions, sliced (optional)

Instructions

  1. Melt butter in a large skillet over medium heat; add onion, mushrooms and collard greens.
  2. Cook, stirring occasionally, 10 minutes or until greens are tender.
  3. Stir in vinegar and crushed red pepper.
  4. Preheat grill to medium-high heat.
  5. Sprinkle mozzarella cheese over grilled side of crust.
  6. Top with sauteed greens and mushrooms and pork; drizzle with barbecue sauce.
  7. Top with tomatoes and Havarti cheese.
  8. Place on grill rack; cover and grill 5 to 6 minutes or until cheese is melted and bottom of crust is browned.
  9. Sprinkle with green onions, if desired.
