Barbecue Pulled Pork Pizza
Ingredients
- 2 Tbsp butter
- 1 sweet onion, thinly sliced
- 1 (8-oz) pkg sliced baby bella mushrooms
- 6 cups chopped collard greens
- 1 Tbsp apple cider vinegar
- ½ tsp crushed red pepper
- 1 Grilled Pizza Crust (from Grilled Pizza Crusts recipe)
- 2 cups shredded mozzarella cheese
- ½ lb chopped smoked pork (see Note)
- ½ cup vinegar-based barbecue sauce
- 3 Roma tomatoes, thinly sliced
- 1 cup shredded Havarti cheese (or use Parmesan)
- 4 green onions, sliced (optional)
Instructions
- Melt butter in a large skillet over medium heat; add onion, mushrooms and collard greens.
- Cook, stirring occasionally, 10 minutes or until greens are tender.
- Stir in vinegar and crushed red pepper.
- Preheat grill to medium-high heat.
- Sprinkle mozzarella cheese over grilled side of crust.
- Top with sauteed greens and mushrooms and pork; drizzle with barbecue sauce.
- Top with tomatoes and Havarti cheese.
- Place on grill rack; cover and grill 5 to 6 minutes or until cheese is melted and bottom of crust is browned.
- Sprinkle with green onions, if desired.
