Roasted Chicken with Apples and Thyme

Ingredients

  • 1 (3½-lb) whole chicken, giblets removed
  • 2 Tbsp olive oil, divided
  • 2 organic crisp sweet apples
  • 3 cloves garlic
  • 6 sprigs fresh thyme, divided
  • ½ lb Brussels sprouts, halved
  • 4 carrots, cut into 3-inch sticks

Instructions

  1. Preheat oven to 400°F.
  2. Place chicken in a large cast-iron skillet or other ovenproof skillet or roasting pan.
  3. Rub chicken all over with 1 Tbsp oil; season with salt and pepper.
  4. Quarter 1 apple; slice remaining apple.
  5. Stuff chicken cavity with quartered apple, garlic, and 2 sprigs thyme; tie legs together with butcher's twine.
  6. Bake chicken 25 minutes.
  7. Remove chicken from oven. Carefully arrange sliced apple, Brussels sprouts, carrots, and 4 sprigs thyme around chicken.
  8. Drizzle vegetables with remaining 1 Tbsp oil.
  9. Bake 30 minutes longer or until a thermometer inserted in thickest portion registers 165°F.
  10. Let stand 10 minutes before slicing.
