One Dish Dinner
Roasted Chicken with Apples and Thyme

Ingredients
- 1 (3½-lb) whole chicken, giblets removed
- 2 Tbsp olive oil, divided
- 2 organic crisp sweet apples
- 3 cloves garlic
- 6 sprigs fresh thyme, divided
- ½ lb Brussels sprouts, halved
- 4 carrots, cut into 3-inch sticks
Instructions
- Preheat oven to 400°F.
- Place chicken in a large cast-iron skillet or other ovenproof skillet or roasting pan.
- Rub chicken all over with 1 Tbsp oil; season with salt and pepper.
- Quarter 1 apple; slice remaining apple.
- Stuff chicken cavity with quartered apple, garlic, and 2 sprigs thyme; tie legs together with butcher's twine.
- Bake chicken 25 minutes.
- Remove chicken from oven. Carefully arrange sliced apple, Brussels sprouts, carrots, and 4 sprigs thyme around chicken.
- Drizzle vegetables with remaining 1 Tbsp oil.
- Bake 30 minutes longer or until a thermometer inserted in thickest portion registers 165°F.
- Let stand 10 minutes before slicing.
