French Onion Beef Stroganoff

Ingredients

  • ¼ cup butter
  • 3 sweet onions, thinly sliced
  • 1½ lb ground beef
  • 1 (8-oz) pkg sliced mushrooms
  • 3 cloves garlic, minced
  • 2 Tbsp all-purpose flour
  • 1 tsp dried thyme
  • 1 tsp salt, 1 tsp pepper
  • 1 (14.5-oz) can beef broth
  • 1 Tbsp Worcestershire sauce
  • 1 (16-oz) pkg fettuccine
  • 1 (8-oz) carton sour cream
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Melt butter in a large oven-safe skillet over medium heat.
  2. Add onions, and cook, stirring occasionally, 20 minutes or until very tender.
  3. Remove from skillet, and set aside.
  4. Cook ground beef, mushrooms, and garlic in same skillet over medium heat until beef is browned and crumbly; drain, and return to skillet.
  5. Stir in flour, thyme, salt and pepper; cook, stirring 2 minutes.
  6. Add broth, Worcestershire sauce, and onions; cook, stirring occasionally, 8 minutes or until slightly thickened.
  7. Meanwhile, cook pasta according to package directions.
  8. Add pasta and sour cream to beef mixture, stirring to combine.
  9. Preheat broiler.
  10. Sprinkle top of beef mixture with cheese; broil 5 to 6 minutes or until cheese is melted and browned.

Side Dish Ingredients

  • 1 head broccoli, cut into florets
  • 3 cloves garlic, minced
  • 3 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 425°F.
  2. Spread broccoli on a large baking sheet and toss with garlic.
  3. Drizzle with oil and season with salt and pepper. Bake 15 minutes or until crisp-tender.
