Pork Carnitas
Plantain Tortillas
Ingredients
- 2 Tbsp avocado oil
- 1 onion, sliced
- 2 cloves garlic, minced
- Shredded pork (from Slow Cooker Ginger-Orange Pork recipe)
- ½ cup organic chicken broth
- 1 Tbsp tomato paste
- 1 tsp ground cumin
- Plantain Tortillas (recipe follows)
- 2 cups shredded lettuce
- ¼ cup chopped fresh cilantro
- 2 limes, cut into wedges
Instructions
- Heat oil in a large skillet over medium heat; add onion and garlic.
- Cook 5 minutes or until tender; stir in pork, broth, tomato paste, cumin, and ½ tsp each salt and pepper.
- Cook 10 minutes or until heated through.
- Serve pork in Plantain Tortillas; top with lettuce and cilantro. Serve with lime wedges.
Side Dish Ingredients
- 2 plantains
- 1 large egg
- 1 large egg white
- 1 Tbsp ghee
- 1 green onion, finely chopped
- 2 Tbsp chopped fresh cilantro
Side Dish Instructions
- Preheat oven to 400°F. Line 2 large baking sheets with parchment paper.
- Process plantains, egg, egg white, ghee and ¼ tsp salt in a blender or food processor until smooth, scraping sides as needed.
- Stir green onion and cilantro into batter.
- For each tortilla, spoon 2 Tbsp batter onto prepared pan. Use a small spatula to smooth the batter and create a thin, round layer.
- Bake 8 minutes. Carefully flip tortillas; bake 4 minutes longer or until golden brown.
