Couscous and Balsamic Wilted Spinach

Ingredients

  • 6 (6-oz) cod fillets (about 1-inch thick; or use grouper)
  • 1 tsp salt, ½ tsp pepper
  • 3 Tbsp olive oil
  • 2 Tbsp chopped fresh flat-leaf parsley
  • 2 tsp grated lemon rind
  • 1½ tsp chopped fresh thyme
  • 1 clove garlic, finely minced

Instructions

  1. Sprinkle fish with salt and pepper.
  2. Cook, in 2 batches, in 1½ Tbsp hot oil per batch in a large skillet over medium-high heat 4 minutes per side or until fish flakes with a fork.
  3. Stir together parsley, lemon rind, thyme and garlic; sprinkle over fish.

  • 1 (7.6-oz) pkg whole wheat couscous
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 2 (5-oz) pkg baby spinach
  • 2 Tbsp balsamic vinegar
  • ½ tsp salt, ½ tsp pepper

Side Dish Instructions

  1. Cook couscous according to package directions.
  2. Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add garlic; sauté 1 minute or until fragrant.
  3. Add spinach, vinegar, salt and pepper; cook 3 to 5 minutes or until spinach is wilted and liquid is almost evaporated.
