Mediterranean Cod
Couscous and Balsamic Wilted SpinachIngredients
- 6 (6-oz) cod fillets (about 1-inch thick; or use grouper)
- 1 tsp salt, ½ tsp pepper
- 3 Tbsp olive oil
- 2 Tbsp chopped fresh flat-leaf parsley
- 2 tsp grated lemon rind
- 1½ tsp chopped fresh thyme
- 1 clove garlic, finely minced
Instructions
- Sprinkle fish with salt and pepper.
- Cook, in 2 batches, in 1½ Tbsp hot oil per batch in a large skillet over medium-high heat 4 minutes per side or until fish flakes with a fork.
- Stir together parsley, lemon rind, thyme and garlic; sprinkle over fish.

- 1 (7.6-oz) pkg whole wheat couscous
- 1 Tbsp olive oil
- 2 cloves garlic, minced
- 2 (5-oz) pkg baby spinach
- 2 Tbsp balsamic vinegar
- ½ tsp salt, ½ tsp pepper
Side Dish Instructions
- Cook couscous according to package directions.
- Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add garlic; sauté 1 minute or until fragrant.
- Add spinach, vinegar, salt and pepper; cook 3 to 5 minutes or until spinach is wilted and liquid is almost evaporated.
