Grilled Romaine Salad
Ingredients
- 2 (3-count) pkg hearts of romaine lettuce
- ¼ cup olive oil, divided
- 2 red onions, cut into ½-inch-thick slices
- 8 peaches, halved and pitted
- 1 (4-oz) carton crumbled feta cheese
- ¼ cup balsamic glaze
- 1 tsp pepper
Instructions
- Preheat grill or grill pan to medium-high heat.
- Cut romaine hearts in half lengthwise to make 12 halves; brush cut sides evenly with 2 Tbsp oil.
- Grill romaine hearts, cut sides down, 2 minutes or until lettuce is slightly charred; place on a serving platter.
- Brush onion slices with 1 Tbsp oil.
- Grill onion, 3 to 4 minutes per side or until browned and tender.
- Brush cut sides of peaches with remaining 1 Tbsp oil.
- Grill peaches, cut sides down, 3 to 4 minutes or until browned and tender; cut into ¼-inch-thick slices.
- Top grilled romaine with onion, peaches and feta.
- Drizzle with glaze; sprinkle with pepper.
