Green Bean and Tomato Salad

Ingredients

  • 2 lb green beans, ends trimmed
  • 6 Tbsp rice vinegar
  • 4 Tbsp olive oil
  • 1 Tbsp honey
  • 2 tsp salt
  • 1 tsp pepper
  • 6 tomatoes, cut into wedges
  • 1 sweet onion, thinly sliced
  • ¼ cup chopped fresh dill

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cut beans into 1-inch pieces; add beans to boiling water.
  3. When water returns to a full boil, drain beans, and plunge into an ice water bath to stop the cooking process.
  4. Meanwhile, whisk together vinegar, oil, honey, salt and pepper in a large bowl.
  5. Drain beans, and add to vinegar mixture.
  6. Stir in tomatoes, onion and dill.
  7. Serve immediately, or cover and refrigerate up to 3 days.
  8. Stir before serving.
