Green Bean and Tomato Salad

Ingredients
- 2 lb green beans, ends trimmed
- 6 Tbsp rice vinegar
- 4 Tbsp olive oil
- 1 Tbsp honey
- 2 tsp salt
- 1 tsp pepper
- 6 tomatoes, cut into wedges
- 1 sweet onion, thinly sliced
- ¼ cup chopped fresh dill
Instructions
- Bring a large pot of salted water to a boil.
- Cut beans into 1-inch pieces; add beans to boiling water.
- When water returns to a full boil, drain beans, and plunge into an ice water bath to stop the cooking process.
- Meanwhile, whisk together vinegar, oil, honey, salt and pepper in a large bowl.
- Drain beans, and add to vinegar mixture.
- Stir in tomatoes, onion and dill.
- Serve immediately, or cover and refrigerate up to 3 days.
- Stir before serving.
