Shrimp Creole

Ingredients

  • 2 Tbsp olive oil
  • 2 onions, chopped
  • 2 green bell peppers, chopped
  • 2 cups chopped celery
  • 4 cloves garlic, chopped
  • 1 (6-oz) can tomato paste
  • ½ cup dry white wine
  • 2 (28-oz) cans diced tomatoes
  • 3 cups chicken broth
  • 3 bay leaves
  • 1½ Tbsp Creole seasoning
  • 2 tsp sugar
  • 4 lb large shrimp, peeled and deveined
  • 5 cups hot cooked rice
  • 1 cup sliced green onions

Instructions

  1. Heat oil in a large Dutch oven over medium heat; add onion, bell pepper, celery and garlic.
  2. Cook 8 minutes or until tender.
  3. Stir in tomato paste; cook, stirring, 2 minutes.
  4. Add wine; cook, stirring, 1 minute.
  5. Add tomatoes, broth, bay leaves, Creole seasoning, and sugar; bring to a boil, reduce heat, and simmer 30 minutes.
  6. Add shrimp; cook, stirring occasionally, 3 to 5 minutes or until shrimp are pink and firm.
  7. Discard bay leaves before serving.
  8. Serve over rice; sprinkle with green onions.
