Shrimp Creole
Ingredients
- 2 Tbsp olive oil
- 2 onions, chopped
- 2 green bell peppers, chopped
- 2 cups chopped celery
- 4 cloves garlic, chopped
- 1 (6-oz) can tomato paste
- ½ cup dry white wine
- 2 (28-oz) cans diced tomatoes
- 3 cups chicken broth
- 3 bay leaves
- 1½ Tbsp Creole seasoning
- 2 tsp sugar
- 4 lb large shrimp, peeled and deveined
- 5 cups hot cooked rice
- 1 cup sliced green onions
Instructions
- Heat oil in a large Dutch oven over medium heat; add onion, bell pepper, celery and garlic.
- Cook 8 minutes or until tender.
- Stir in tomato paste; cook, stirring, 2 minutes.
- Add wine; cook, stirring, 1 minute.
- Add tomatoes, broth, bay leaves, Creole seasoning, and sugar; bring to a boil, reduce heat, and simmer 30 minutes.
- Add shrimp; cook, stirring occasionally, 3 to 5 minutes or until shrimp are pink and firm.
- Discard bay leaves before serving.
- Serve over rice; sprinkle with green onions.
