Bean and Cheese Burritos

Ingredients

  • 2 (8-oz) pkg Spanish ready rice
  • 1 (15-oz) can refried beans
  • 1 Tbsp Mexican seasoning
  • 6 burrito-size flour tortillas
  • 1 (8-oz) carton sour cream
  • 1 (8-oz) pkg shredded Mexican blend cheese
  • 1 (16-oz) container fresh salsa, divided
  • 1 (8-oz) pkg shredded iceberg lettuce
  • 1 avocado, pitted and thinly sliced

Instructions

  1. Heat rice according to package directions.
  2. Stir together refried beans, Mexican seasoning, and 2 Tbsp water in a small saucepan.
  3. Cook over medium heat, stirring often, 4 to 5 minutes or until heated through.
  4. Spread about 3 Tbsp beans over center of each tortilla; top each with about ⅓ cup rice.
  5. Top tortillas with 2 Tbsp each sour cream, cheese and salsa, ¼ cup lettuce, and 2 to 3 avocado slices.
  6. Fold in sides of burritos; roll up to completely enclose filling.
  7. Cut burritos in half, and serve with remaining salsa for dipping.

  • ½ (11-oz) bag tortilla chips
  • 6 mandarin oranges, sectioned

Side Dish Instructions

  1. Serve chips and oranges with burritos.
