Cuban Lettuce Wraps

Spicy Sweet Potato Chips

Ingredients

  • Shredded pork roast (from Smoky Pulled Pork recipe)
  • 8 large romaine lettuce leaves, cut in half crosswise
  • ½ lb sliced nitrite-free ham, cut in half crosswise
  • 8 stacker sliced dill pickles
  • Dijon mustard

Instructions

  1. Heat pork in microwave at HIGH 1 minute.
  2. For each wrap, stack 2 pieces of lettuce on a flat work surface.
  3. Layer shredded pork, ham and pickles on leaves; drizzle desired amount of mustard over ham.
  4. Roll-up to serve.

Side Dish Ingredients

  • 2 sweet potatoes
  • 2 Tbsp avocado oil
  • ⅛ tsp cayenne pepper

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Use a mandoline to thinly slice sweet potatoes.
  3. Combine sweet potato slices, oil, ½ tsp kosher salt, and the cayenne pepper.
  4. Spread potato slices in a single layer on 2 large baking sheets.
  5. Bake 20 to 25 minutes or until golden and crisp, turning potatoes once after 12 minutes.
