Greek Salad in a Jar

Ingredients
- ¾ cup light balsamic vinaigrette
- ¼ cup pitted kalamata olives
- 1 (14-oz) can quartered artichoke hearts, drained
- 1 (10-oz) pkg matchstick-cut carrots
- ½ seedless cucumber, quartered and thinly sliced
- 1 head radicchio, thinly sliced
- 1 pint grape tomatoes, halved
- ¼ cup pine nuts, toasted
- 1½ cups shredded rotisserie chicken, without skin
- 1 (9-oz) pkg baby spinach
Instructions
- Pour 3 Tbsp vinaigrette in each of 4 (1-quart) Mason jars.
- Layer olives, artichokes, carrots, cucumber, radicchio, tomatoes, pine nuts, chicken and spinach, in that order, in jars.
- Seal jars, and chill up to 3 days.
