Bacon-Cheese Hash Brown Waffles with Fried Eggs

Ingredients

  • 1 (30-oz) pkg frozen hash browns, thawed
  • 8 slices center-cut bacon, cooked and crumbled
  • 1 cup freshly grated Parmesan cheese
  • 2 Tbsp chopped green onion
  • 2 Tbsp chopped fresh parsley
  • ½ tsp garlic salt
  • 8 large eggs, divided

Instructions

  1. Place hash browns between several layers of paper towels; roll up, and squeeze to remove excess liquid from potatoes.
  2. Place potatoes in a large bowl.
  3. Stir in bacon, cheese, green onion, parsley, garlic salt, and 1 tsp pepper.
  4. Lightly beat 2 eggs; add to potato mixture, stirring to combine.
  5. Preheat waffle iron according to manufacturer's directions.
  6. Spray both sides of iron with cooking spray.
  7. Spoon about 1 cup potato mixture onto waffle iron; close and cook 5 minutes or until browned and crisp.
  8. Repeat procedure, spraying waffle iron in between batches with cooking spray.
  9. Meanwhile, spray a large nonstick skillet with cooking spray; heat over medium heat.
  10. Fry 6 eggs, in batches, to desired doneness.
  11. Serve fried eggs over waffles.
