Dijon-Maple Chicken

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 2 Tbsp Dijon mustard
  • 1 Tbsp maple syrup
  • ½ tsp dried thyme
  • 1 tsp red wine vinegar
  • ¼ tsp salt, ¼ tsp pepper

Instructions

  1. Preheat oven to 350°F.
  2. Cut chicken in half crosswise; pound each half to an even thickness, and place in a greased 13- x 9-inch baking dish.
  3. Whisk together remaining ingredients; pour over chicken.
  4. Bake 20 minutes or until chicken is done.

  • ½ (16-oz) pkg frozen Italian vegetable blend
  • 1 tsp olive oil
  • ¼ tsp garlic salt, ¼ tsp pepper

  2. Steam vegetables according to package directions; toss with oil, garlic salt, and pepper.
