Dijon-Maple Chicken
Long Grain and Wild Rice and Garlic Vegetables
Ingredients
- ¾ lb boneless, skinless chicken breasts
- 2 Tbsp Dijon mustard
- 1 Tbsp maple syrup
- ½ tsp dried thyme
- 1 tsp red wine vinegar
- ¼ tsp salt, ¼ tsp pepper
Instructions
- Preheat oven to 350°F.
- Cut chicken in half crosswise; pound each half to an even thickness, and place in a greased 13- x 9-inch baking dish.
- Whisk together remaining ingredients; pour over chicken.
- Bake 20 minutes or until chicken is done.

- ½ (16-oz) pkg frozen Italian vegetable blend
- 1 tsp olive oil
- ¼ tsp garlic salt, ¼ tsp pepper

- Steam vegetables according to package directions; toss with oil, garlic salt, and pepper.
