Smoky Turkey Chili in Sweet Potatoes
Ingredients
- 2 lb lean ground turkey, broken into chunks
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 (14.5-oz) can diced tomatoes
- 1¾ cups organic chicken broth
- 3 Tbsp chopped chipotle chile peppers in adobo sauce (about 3 to 4 peppers)
- 6 cloves garlic, minced
- 6 sweet potatoes
- 2 green onions, chopped
- Lime wedges
Instructions
- Combine first 7 ingredients, 2 tsp salt and 1 tsp pepper in a 5- to 7-quart slow cooker.
- Cover and cook on LOW 5 to 6 hours.
- Meanwhile, preheat oven to 400°F.
- Pierce potatoes several times using a knife.
- Bake potatoes on a foil-lined baking sheet 1 hour or until tender.
- Split potatoes lengthwise, and spoon turkey chili over top using a slotted spoon.
- Sprinkle with green onions; serve with lime wedges.
