Tuscan Pork Chops

Parmesan Pepper Pasta with Peas

Ingredients

  • 6 boneless pork chops
  • 1 Tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp pepper
  • 3 Tbsp olive oil, divided
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 (28-oz) can diced tomatoes

Instructions

  1. Sprinkle pork chops with Italian seasoning, salt, and pepper.
  2. Heat 2 Tbsp oil in a large skillet over medium-high heat; add pork, and cook 5 minutes per side or until browned.
  3. Remove from skillet, and set aside.
  4. Heat remaining 1 Tbsp oil in skillet over medium-high heat; add onion and garlic.
  5. Cook, stirring 5 minutes or until just tender.
  6. Stir in tomatoes; bring to a boil, reduce heat, and simmer.
  7. Return pork to pan, and cook 5 minutes or until pork is done and sauce is thickened.
  8. Season to taste and serve over pasta.

Side Dish Ingredients

  • ½ (16-oz) pkg spaghetti
  • 1 (12-oz) pkg frozen peas
  • ¼ cup butter
  • ½ cup shredded Parmesan cheese
  • 1 tsp pepper

Side Dish Instructions

  1. Cook pasta according to package directions, adding peas during last 2 minutes of cooking time; drain and return to pot.
  2. Add butter, cheese, and pepper; tossing to coat.
