Tuscan Pork Chops
Parmesan Pepper Pasta with Peas
Ingredients
- 6 boneless pork chops
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 1 tsp pepper
- 3 Tbsp olive oil, divided
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 (28-oz) can diced tomatoes
Instructions
- Sprinkle pork chops with Italian seasoning, salt, and pepper.
- Heat 2 Tbsp oil in a large skillet over medium-high heat; add pork, and cook 5 minutes per side or until browned.
- Remove from skillet, and set aside.
- Heat remaining 1 Tbsp oil in skillet over medium-high heat; add onion and garlic.
- Cook, stirring 5 minutes or until just tender.
- Stir in tomatoes; bring to a boil, reduce heat, and simmer.
- Return pork to pan, and cook 5 minutes or until pork is done and sauce is thickened.
- Season to taste and serve over pasta.

- ½ (16-oz) pkg spaghetti
- 1 (12-oz) pkg frozen peas
- ¼ cup butter
- ½ cup shredded Parmesan cheese
- 1 tsp pepper
Side Dish Instructions
- Cook pasta according to package directions, adding peas during last 2 minutes of cooking time; drain and return to pot.
- Add butter, cheese, and pepper; tossing to coat.
