Bean and Cheese Burritos

Ingredients

  • ½ cup long-grain white rice
  • 1 (16-oz) can fat-free refried beans
  • 1 Tbsp Mexican seasoning
  • 6 burrito-size flour tortillas
  • 6 Tbsp reduced-fat sour cream
  • 1½ cups shredded reduced-fat Mexican-blend cheese (or use Cheddar)
  • ¾ cup refrigerated salsa, divided
  • 1 (8-oz) pkg shredded iceberg lettuce
  • 2 avocados, pitted and thinly sliced

Instructions

  1. Cook rice according to package directions.
  2. Meanhwhile, stir together refried beans, Mexican seasoning, and 2 Tbsp water in a small saucepan.
  3. Cook over medium heat, stirring often, 4 to 5 minutes or until thoroughly heated.
  4. Microwave tortillas according to package directions.
  5. Spread bean mixture over tortillas; top each with ¼ cup rice, 1 Tbsp sour cream, ¼ cup cheese, 1 Tbsp salsa, ¼ cup lettuce, and avocado.
  6. For each burrito, fold side closest to you over filling, then fold right and left sides toward center. Tightly roll up burrito.
  7. Cut burritos in half. Serve with remaining salsa.
