One Dish Dinner
Secret Ingredient Baked Potato Soup

Ingredients
- 4 large baking potatoes
- 1 (16-oz) pkg bacon
- ½ cup butter
- ½ cup flour
- 3 cups milk
- 3 cups chicken broth
- 1 tsp salt
- 1 tsp pepper
- 1 (1-oz) envelope Ranch dressing mix, need 2 tsp dry mix
- 1 (8-oz) carton sour cream
- 1¼ cups shredded Cheddar cheese
Instructions
- Preheat oven to 400°F.
- Bake potatoes 1 hour or until tender; cool and mash.
- Cook bacon in batches until crisp; drain and crumble.
- Melt butter in a soup pot over medium heat; stir in flour.
- Cook 1 minute, stirring constantly. Gradually stir in milk and then broth, cooking and whisking constantly until thickened.
- Stir in small spoonfuls of mashed potato, salt, pepper and Ranch dressing mix; bring to a boil, stirring often.
- Reduce heat, and simmer 10 minutes. Mix in sour cream until blended.
- Sprinkle each serving with cheese and bacon.
