Secret Ingredient Baked Potato Soup

Ingredients

  • 4 large baking potatoes
  • 1 (16-oz) pkg bacon
  • ½ cup butter
  • ½ cup flour
  • 3 cups milk
  • 3 cups chicken broth
  • 1 tsp salt
  • 1 tsp pepper
  • 1 (1-oz) envelope Ranch dressing mix, need 2 tsp dry mix
  • 1 (8-oz) carton sour cream
  • 1¼ cups shredded Cheddar cheese

Instructions

  1. Preheat oven to 400°F.
  2. Bake potatoes 1 hour or until tender; cool and mash.
  3. Cook bacon in batches until crisp; drain and crumble.
  4. Melt butter in a soup pot over medium heat; stir in flour.
  5. Cook 1 minute, stirring constantly. Gradually stir in milk and then broth, cooking and whisking constantly until thickened.
  6. Stir in small spoonfuls of mashed potato, salt, pepper and Ranch dressing mix; bring to a boil, stirring often.
  7. Reduce heat, and simmer 10 minutes. Mix in sour cream until blended.
  8. Sprinkle each serving with cheese and bacon.
