Broccoli, Sausage and Cheese Mini Quiches
Red Grapes
Ingredients
- ½ lb turkey breakfast sausage
- 1½ cups broccoli florets
- 1 cup shredded reduced-fat sharp Cheddar cheese
- 8 large eggs, lightly beaten
- ¼ cup low-fat milk
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 425°F.
- Cook sausage in a large nonstick skillet over medium heat. Drain on paper towels.
- Chop broccoli into small pieces. Cook broccoli in skillet for 3 to 4 minutes or until softened.
- Coat a 12-cup muffin pan with cooking spray. Divide broccoli, sausage, and cheese evenly among muffin cups.
- Whisk together eggs, milk, salt, and pepper in a large bowl. Divide egg mixture evenly among muffin cups.
- Bake 10 minutes or until puffed and set in center.
- Cool in pan 10 minutes; run a knife around the edges to remove quiches.
- Makes 2 muffins per serving.
