Broccoli, Sausage and Cheese Mini Quiches

Ingredients

  • ½ lb turkey breakfast sausage
  • 1½ cups broccoli florets
  • 1 cup shredded reduced-fat sharp Cheddar cheese
  • 8 large eggs, lightly beaten
  • ¼ cup low-fat milk
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 425°F.
  2. Cook sausage in a large nonstick skillet over medium heat. Drain on paper towels.
  3. Chop broccoli into small pieces. Cook broccoli in skillet for 3 to 4 minutes or until softened.
  4. Coat a 12-cup muffin pan with cooking spray. Divide broccoli, sausage, and cheese evenly among muffin cups.
  5. Whisk together eggs, milk, salt, and pepper in a large bowl. Divide egg mixture evenly among muffin cups.
  6. Bake 10 minutes or until puffed and set in center.
  7. Cool in pan 10 minutes; run a knife around the edges to remove quiches.
  8. Makes 2 muffins per serving.

  • 2 cups seedless red grapes
