Beefy Pasta Skillet Dinner
Roasted Carrots
Ingredients
- 1½ lb ground beef
- 2 cloves garlic, minced
- 1 (28-oz) can fire-roasted crushed tomatoes (or mild canned diced tomatoes)
- 2 cups chicken broth
- 3 zucchini, halved lengthwise and thinly sliced
- 3 cups rotini pasta
- 2 tsp dried Italian seasoning
- 1 tsp salt
- ½ tsp pepper
- 1 cup shredded mozzarella cheese
Instructions
- Cook ground beef and garlic in a large skillet over medium heat until beef is browned and crumbly. Drain.
- Stir in tomatoes, broth, zucchini, pasta, Italian seasoning, salt, and pepper .
- Bring to a boil over medium-high heat; cover, reduce heat, and simmer 10 minutes or until pasta is just tender. Sprinkle with cheese.
Side Dish Ingredients
- 2 lb carrots, diagonally sliced into ¾-inch pieces
- 2 Tbsp olive oil
- 1 tsp salt
- ¼ tsp pepper
- 1 Tbsp chopped fresh rosemary (optional)
Side Dish Instructions
- Preheat oven to 450°F.
- Toss carrots and oil on a large rimmed baking sheet. Sprinkle with salt and pepper.
- Roast 30 minutes, stirring after 20 minutes.
- Sprinkle with rosemary, if desired; roast 5 minutes longer.
