Beefy Pasta Skillet Dinner

Ingredients

  • 1½ lb ground beef
  • 2 cloves garlic, minced
  • 1 (28-oz) can fire-roasted crushed tomatoes (or mild canned diced tomatoes)
  • 2 cups chicken broth
  • 3 zucchini, halved lengthwise and thinly sliced
  • 3 cups rotini pasta
  • 2 tsp dried Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Cook ground beef and garlic in a large skillet over medium heat until beef is browned and crumbly. Drain.
  2. Stir in tomatoes, broth, zucchini, pasta, Italian seasoning, salt, and pepper .
  3. Bring to a boil over medium-high heat; cover, reduce heat, and simmer 10 minutes or until pasta is just tender. Sprinkle with cheese.

Side Dish Ingredients

  • 2 lb carrots, diagonally sliced into ¾-inch pieces
  • 2 Tbsp olive oil
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 Tbsp chopped fresh rosemary (optional)

Side Dish Instructions

  1. Preheat oven to 450°F.
  2. Toss carrots and oil on a large rimmed baking sheet. Sprinkle with salt and pepper.
  3. Roast 30 minutes, stirring after 20 minutes.
  4. Sprinkle with rosemary, if desired; roast 5 minutes longer.
