Grilled Lemon Chicken

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 1½ tsp salt
  • 1 tsp cayenne pepper
  • 1 tsp ground cumin
  • 3 Tbsp fresh lemon juice

Instructions

  1. Preheat grill (or grill pan) to medium-high heat.
  2. Brush chicken with oil; sprinkle with salt, cayenne pepper and cumin.
  3. Grill chicken, covered with grill lid, 5 minutes per side or until done.
  4. Drizzle lemon juice over chicken.

Side Dish Ingredients

  • 1 (16-oz) pkg angel hair pasta
  • 1 (12-oz) pkg broccoli florets
  • 1 pint grape tomatoes, halved
  • ½ (10-oz) jar basil pesto

Side Dish Instructions

  1. Cook pasta according to pkg directions, adding broccoli during last 1 minute of cooking. Drain.
  2. Stir together pasta mixture, tomatoes, and pesto until combined.
