Bacon Hamburger Chopped Salad

Ingredients
- 1½ lb grass-fed ground beef
- 1 tsp salt
- ½ tsp pepper
- 12 slices nitrite-free bacon
- 6 cups (or more) chopped romaine lettuce
- 2 avocados, chopped
- 1 large tomato, chopped
- ½ large red onion, chopped
- Balsamic vinegar
- Dijon mustard
Instructions
- Mix ground beef, salt and pepper; shape into 5 large thin patties.
- Cook over medium heat in a nonstick skillet 5 minutes per side or until no longer pink; cool and coarsely crumble.
- Cook bacon in a large skillet until crisp; coarsely crumble.
- Combine lettuce, crumbled hamburger, bacon, avocados, tomato and onion; toss.
- Serve in bowls with desired amount of balsamic vinegar and Dijon mustard.
Side Dish Ingredients
- 2 lb carrots, cut into 3-inch sticks
- 2 Tbsp avocado oil
- 1 tsp salt
- ½ tsp pepper
- ¼ tsp dried rosemary
Side Dish Instructions
- Preheat oven to 425°F.
- Toss together carrots, oil, salt, pepper and rosemary on 2 large rimmed baking sheets.
- Spread carrots in a single layer.
- Bake 20 minutes or until carrots are browned and tender, turning once halfway through cooking.
