Grilled Chicken Kabobs

Garlic-Basil Potatoes

Ingredients

  • ¼ cup soy sauce
  • ¼ cup olive oil
  • ¼ cup honey
  • 2 cloves garlic, pressed
  • 1½ lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 red bell peppers (or any color), cut into 1-inch pieces
  • 2 red onions, cut into small wedges
  • 2 zucchini, cut into 1-inch pieces
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Whisk together first 4 ingredients in a large bowl; remove ¼ cup marinade, and reserve.
  2. Add chicken to remaining marinade in bowl, and toss. Cover and chill 30 minutes.
  3. Preheat grill to medium-high heat. Alternately thread chicken and vegetables onto metal or bamboo skewers. Sprinkle with salt and pepper. Discard any remaining marinade in bowl.
  4. Place skewers on a greased grill rack. Grill, covered with grill lid, 5 to 6 minutes per side or until chicken is done.
  5. Drizzle kabobs with reserved ¼ cup marinade.

Side Dish Ingredients

  • 2 lb red potatoes, quartered
  • 2 Tbsp olive oil
  • 3 Tbsp chopped fresh basil
  • ½ tsp grated lemon rind
  • 1 clove garlic, minced
  • 2 Tbsp butter, softened

Side Dish Instructions

  1. Preheat grill to medium-high heat.
  2. Bring potatoes and water to cover to a boil in a saucepan over medium-high heat. Cook 3 minutes; drain. Rinse potatoes with cold water; pat dry.
  3. Toss potatoes with oil.
  4. Grill potatoes in a vegetable basket 8 minutes or until blistered and tender.
  5. Stir basil, lemon rind, and garlic into butter. Toss hot potatoes with butter. Season with salt and pepper to taste.
