Lemon and Basil Pork Tenderloin

Grilled Parmesan Asparagus and Grilled Corn on the Cob

Ingredients

  • 1½ Tbsp olive oil
  • 1 Tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 2 Tbsp minced fresh basil
  • ¾ lb pork tenderloin

Instructions

  1. Stir together oil, lemon juice, garlic, and basil in a medium bowl.
  2. Add pork, turning to coat; let stand 10 minutes.
  3. Preheat grill or grill pan to medium-high heat.
  4. Remove pork from marinade, discarding marinade; season pork with salt and pepper.
  5. Grill pork, covered with grill lid, 8 minutes per side or until a thermometer inserted in thickest portion registers 145°F.
  6. Let stand 5 minutes before slicing.

Side Dish Ingredients

  • ½ lb bunch asparagus, trimmed
  • ½ Tbsp olive oil
  • ¼ cup freshly grated Parmesan cheese
  • 2 ears corn on the cob, shucked
  • 2 Tbsp butter, softened

Side Dish Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Toss asparagus with oil; place on grill.
  3. Grill, covered with grill lid, 3 minutes or until asparagus is tender; remove from grill, sprinkle with cheese and season to taste.
  4. Spread butter over corn; wrap in foil, twisting ends to seal. Grill, covered with grill lid, 10 minutes, turning frequently, until tender.
