Lemon and Basil Pork Tenderloin
Grilled Parmesan Asparagus and Grilled Corn on the Cob
Ingredients
- 1½ Tbsp olive oil
- 1 Tbsp fresh lemon juice
- 1 clove garlic, minced
- 2 Tbsp minced fresh basil
- ¾ lb pork tenderloin
Instructions
- Stir together oil, lemon juice, garlic, and basil in a medium bowl.
- Add pork, turning to coat; let stand 10 minutes.
- Preheat grill or grill pan to medium-high heat.
- Remove pork from marinade, discarding marinade; season pork with salt and pepper.
- Grill pork, covered with grill lid, 8 minutes per side or until a thermometer inserted in thickest portion registers 145°F.
- Let stand 5 minutes before slicing.
Side Dish Ingredients
- ½ lb bunch asparagus, trimmed
- ½ Tbsp olive oil
- ¼ cup freshly grated Parmesan cheese
- 2 ears corn on the cob, shucked
- 2 Tbsp butter, softened
Side Dish Instructions
- Preheat grill or grill pan to medium-high heat.
- Toss asparagus with oil; place on grill.
- Grill, covered with grill lid, 3 minutes or until asparagus is tender; remove from grill, sprinkle with cheese and season to taste.
- Spread butter over corn; wrap in foil, twisting ends to seal. Grill, covered with grill lid, 10 minutes, turning frequently, until tender.
