Chicken Finger Nachos

Ingredients

  • 2 lb chicken tenderloins
  • 1 Tbsp olive oil
  • 2 Tbsp Mexican seasoning
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup real bacon pieces
  • 1 (8-oz) carton sour cream
  • 1 (16-oz) carton refrigerated guacamole
  • 1 (16-oz) carton fresh salsa
  • ½ cup chopped fresh cilantro (optional)

Instructions

  1. Preheat oven to 400°F; line a rimmed baking sheet with parchment paper.
  2. Rub chicken with 1 Tbsp oil; sprinkle with seasoning.
  3. Arrange seasoned chicken in a single layer on prepared pan.
  4. Bake 20 minutes or until chicken is done.
  5. Arrange chicken in center of pan to resemble nachos; sprinkle with cheeses and bacon.
  6. Bake 5 minutes or until cheese is melted.
  7. Serve with sour cream, guacamole and salsa; sprinkle with cilantro, if desired.

Side Dish Ingredients

  • 1 Tbsp fresh lemon juice
  • 1 Tbsp honey
  • 1 (16-oz) carton strawberries, hulled and sliced
  • 1 cantaloupe, peeled, seeded, and chopped

Side Dish Instructions

  1. Combine lemon juice and honey in a large bowl. Add fruit, tossing to coat.
