Chicken Finger Nachos

Ingredients
- 2 lb chicken tenderloins
- 1 Tbsp olive oil
- 2 Tbsp Mexican seasoning
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- ½ cup real bacon pieces
- 1 (8-oz) carton sour cream
- 1 (16-oz) carton refrigerated guacamole
- 1 (16-oz) carton fresh salsa
- ½ cup chopped fresh cilantro (optional)
Instructions
- Preheat oven to 400°F; line a rimmed baking sheet with parchment paper.
- Rub chicken with 1 Tbsp oil; sprinkle with seasoning.
- Arrange seasoned chicken in a single layer on prepared pan.
- Bake 20 minutes or until chicken is done.
- Arrange chicken in center of pan to resemble nachos; sprinkle with cheeses and bacon.
- Bake 5 minutes or until cheese is melted.
- Serve with sour cream, guacamole and salsa; sprinkle with cilantro, if desired.
Side Dish Ingredients
- 1 Tbsp fresh lemon juice
- 1 Tbsp honey
- 1 (16-oz) carton strawberries, hulled and sliced
- 1 cantaloupe, peeled, seeded, and chopped
Side Dish Instructions
- Combine lemon juice and honey in a large bowl. Add fruit, tossing to coat.
