One Dish Dinner
Teriyaki Chicken and Vegetables
Jasmine Rice
Ingredients
- 1½ lb boneless, skinless chicken breasts, cut into thin strips
- ½ tsp garlic powder
- ½ tsp pepper
- 2 Tbsp olive oil, divided
- 2 (12-oz) pkg stir-fry vegetables
- 1 (16-oz) bottle honey teriyaki sauce and marinade
Instructions
- Sprinkle chicken with garlic powder and pepper.
- Heat 1 Tbsp oil in a large skillet over medium-high heat. Add chicken, and cook, stirring 5 to 6 minutes or until done.
- Remove from skillet, and set aside. Heat remaining 1 Tbsp oil in skillet over medium-high heat.
- Add vegetables and cook, stirring 3 minutes. Add 2 Tbsp water; cover, and cook 2 minutes or until crisp-tender.
- Uncover, add chicken and desired amount of teriyaki sauce. Cook, 2 minutes or until heated through. Serve over rice.

- 2 (8.8-oz) pkg jasmine ready rice
