Grilled Margarita Pizzas

Grilled Asparagus

Ingredients

  • 2 (12-inch) prebaked pizza crusts
  • 6 cloves garlic, minced
  • ¼ cup olive oil
  • 2 (8-oz) balls fresh mozzarella cheese, sliced (or use shredded mozzarella cheese)
  • 2 large Roma tomatoes, sliced
  • ½ small red onion, thinly sliced (optional)
  • ¼ cup chopped fresh basil
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat grill to medium-high heat.
  2. Stir garlic into oil; brush tops of pizzas with garlic oil. Top each pizza with cheese, sliced tomato and red onion.
  3. Grill 6 to 8 minutes or until cheese is melted. Sprinkle with basil, salt, and pepper.

Side Dish Ingredients

  • 2 lb asparagus, trimmed
  • 1 Tbsp olive oil
  • ½ tsp kosher salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat grill to medium-high heat.
  2. Combine asparagus, oil, salt and pepper in a shallow dish; toss to coat.
  3. Place asparagus on a grill rack; grill 4 minutes or until tender, turning occasionally.
