Chicken and Refried Bean Tostadas

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ¼ tsp pepper
  • ¼ tsp ground cumin
  • ¼ tsp chili powder
  • 6 soft taco-size low-carb flour tortillas
  • 1 (16-oz) can fat-free refried black beans
  • 2 romaine lettuce hearts, shredded
  • 2 avocados, peeled and diced
  • 1 (16-oz) container refrigerated salsa
  • ½ cup thinly sliced red onion
  • ¼ cup chopped fresh cilantro (or use flat-leaf parsley)

Instructions

  1. Preheat oven to 375°F.
  2. Sprinkle chicken with pepper, cumin and chili powder; place in a baking dish coated with cooking spray.
  3. Bake 20 to 25 minutes or until done. Cool slightly, and shred.
  4. Coat tortillas with cooking spray, and bake on a baking sheet 2 to 3 minutes or until toasted.
  5. Spread refried beans over tortillas. Top with chicken, lettuce, avocado, salsa, onion and cilantro.

Side Dish Ingredients

  • 3 mangos, peeled, seeded, and cut into ½-inch pieces
  • 2 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
  • ¼ cup fresh lime juice
  • ¼ tsp cayenne pepper

Side Dish Instructions

  1. Combine all ingredients in a bowl; chill until ready to serve.
