Grilled Cajun Chicken
Crispy Smashed Potatoes and Roasted Asparagus
Ingredients
- 1½ lb boneless, skinless chicken breasts, cut in half crosswise
- 2 Tbsp olive oil
- 2 Tbsp Cajun seasoning
- ½ tsp garlic powder
Instructions
- Preheat grill or grill pan to medium-high heat.
- Pound chicken to an even thickness; rub with oil, and sprinkle with Cajun seasoning and garlic powder.
- Place chicken on greased grill rack.
- Grill chicken, covered with grill lid, 5 to 8 minutes per side or until done.
Side Dish Ingredients
- 2½ lb small red potatoes
- 4 Tbsp olive oil
- 1 tsp garlic salt
- 1 tsp pepper
- 1 lb asparagus, trimmed
Side Dish Instructions
- Preheat oven to 450°F.
- Boil potatoes 10 minutes or until just tender; drain and place on a greased baking sheet.
- Using a potato masher, mash each potato until flattened, but still in one piece.
- Drizzle with 3 Tbsp oil, garlic salt and pepper.
- Bake 15 to 20 minutes or until edges of potatoes are browned and crispy.
- Toss asparagus with 1 Tbsp oil on a rimmed baking sheet.
- Bake 6 to 8 minutes or until browned and tender; season to taste.
