Grilled Cajun Chicken

Crispy Smashed Potatoes and Roasted Asparagus

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut in half crosswise
  • 2 Tbsp olive oil
  • 2 Tbsp Cajun seasoning
  • ½ tsp garlic powder

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Pound chicken to an even thickness; rub with oil, and sprinkle with Cajun seasoning and garlic powder.
  3. Place chicken on greased grill rack.
  4. Grill chicken, covered with grill lid, 5 to 8 minutes per side or until done.

Side Dish Ingredients

  • 2½ lb small red potatoes
  • 4 Tbsp olive oil
  • 1 tsp garlic salt
  • 1 tsp pepper
  • 1 lb asparagus, trimmed

Side Dish Instructions

  1. Preheat oven to 450°F.
  2. Boil potatoes 10 minutes or until just tender; drain and place on a greased baking sheet.
  3. Using a potato masher, mash each potato until flattened, but still in one piece.
  4. Drizzle with 3 Tbsp oil, garlic salt and pepper.
  5. Bake 15 to 20 minutes or until edges of potatoes are browned and crispy.
  6. Toss asparagus with 1 Tbsp oil on a rimmed baking sheet.
  7. Bake 6 to 8 minutes or until browned and tender; season to taste.
