Sausage and Bell Pepper Kabobs

Ingredients

  • 3 Tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp dried basil
  • 2 (14-oz) pkg smoked sausage, cut into 1-inch-thick slices
  • 2 onions, cut into wedges
  • 2 green bell peppers, cut into 1-inch pieces
  • 2 red bell peppers, cut into 1-inch pieces
  • 10 metal skewers

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Whisk together oil, garlic and basil in a small bowl.
  3. Thread sausage, onions, and bell peppers onto skewers; season with salt and pepper.
  4. Brush kabobs with oil mixture; place on grill rack.
  5. Grill, covered, 5 to 6 minutes per side or until sausage is browned and vegetables are tender.

Side Dish Ingredients

  • 2 (5.8-oz) pkg couscous
  • 1 tomato, chopped
  • 1 cucumber, chopped
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice

Side Dish Instructions

  1. Prepare couscous according to package directions; let cool.
  2. Toss with tomato, cucumber, garlic, oil, lemon juice and salt and pepper to taste.
