Cowboy Casserole

Ingredients

  • 1½ lb ground beef
  • ½ cup chopped onion
  • 1 green bell pepper, chopped
  • 3 cloves garlic, chopped
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 (10¾-oz) can cream of chicken soup
  • ½ cup half-and-half
  • ¼ cup sour cream
  • ¼ cup freshly shredded Parmesan cheese
  • 2 large baking potatoes, peeled and thinly sliced
  • 2 cups shredded Cheddar cheese, divided

Instructions

  1. Preheat oven to 350°F.
  2.  Brown ground beef with onion and bell pepper; drain and stir in garlic, salt and pepper.
  3. Mix together beef mixture, soup, half-and-half, sour cream and Parmesan cheese in a bowl.
  4. Alternately layer sliced potatoes, beef mixture and Cheddar cheese in a greased 13- x 9-inch baking dish.
  5. Cover with foil; bake 1 hour.
  6. Uncover and bake 20 minutes longer.

Side Dish Ingredients

  • 1½ lb broccoli florets
  • 3 cloves garlic, minced
  • 5 Tbsp olive oil, divided
  • ¼ cup freshly shredded Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 350°F.
  2. Toss broccoli with garlic, 3 Tbsp olive oil, and desired amount of salt and pepper.
  3. Spread on a rimmed baking sheet.
  4. Roast 25 minutes.
  5. Remove from oven; toss with remaining 2 Tbsp olive oil and Parmesan cheese.
