Chicken and Plantain Waffles with Bacon

Ingredients

  • 1½ lb boneless, skinless chicken breasts, pounded to ½-inch-thickness
  • ⅓ cup plus 1 Tbsp olive oil, divided
  • 10 slices natural, uncured bacon, chopped
  • 2 large green plantains, peeled and sliced
  • 2 large eggs
  • 1 Tbsp honey
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 Tbsp chopped fresh parsley
  • Pure maple syrup

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Rub chicken with 1 Tbsp oil; lightly sprinkle with salt and pepper.
  3. Grill chicken, covered with grill lid, 6 minutes per side or until done; thinly slice.
  4. Meanwhile, cook bacon in a skillet over medium heat until crisp; drain on paper towels.
  5. Process plantains, eggs, ⅓ cup oil, honey, baking powder, and salt in a blender or food processor until smooth, scraping sides as needed.
  6. Heat waffle iron according to manufacturer's instructions; spray with cooking spray.
  7. Pour about ¾ cup batter onto waffle iron, and cook according to manufacturer's instructions.
  8. Top each waffle with chicken and bacon; sprinkle with parsley.
  9. Drizzle with desired amount of maple syrup.
