Marinate Ahead and Grill
Chicken and Plantain Waffles with Bacon
Ingredients
- 1½ lb boneless, skinless chicken breasts, pounded to ½-inch-thickness
- ⅓ cup plus 1 Tbsp olive oil, divided
- 10 slices natural, uncured bacon, chopped
- 2 large green plantains, peeled and sliced
- 2 large eggs
- 1 Tbsp honey
- 1 tsp baking powder
- ½ tsp salt
- 2 Tbsp chopped fresh parsley
- Pure maple syrup
Instructions
- Preheat grill or grill pan to medium-high heat.
- Rub chicken with 1 Tbsp oil; lightly sprinkle with salt and pepper.
- Grill chicken, covered with grill lid, 6 minutes per side or until done; thinly slice.
- Meanwhile, cook bacon in a skillet over medium heat until crisp; drain on paper towels.
- Process plantains, eggs, ⅓ cup oil, honey, baking powder, and salt in a blender or food processor until smooth, scraping sides as needed.
- Heat waffle iron according to manufacturer's instructions; spray with cooking spray.
- Pour about ¾ cup batter onto waffle iron, and cook according to manufacturer's instructions.
- Top each waffle with chicken and bacon; sprinkle with parsley.
- Drizzle with desired amount of maple syrup.
