Spinach-Feta Florentine Chicken
Buttery Angel Hair Pasta and Simple Green Salad
Ingredients
- ½ (5-oz) pkg baby spinach
- ¾ lb boneless, skinless chicken breasts, cut in half lengthwise
- ½ (10.5-oz) pkg grape tomatoes, cut in half (if desired)
- ½ (4-oz) pkg crumbled feta cheese
- ½ cup balsamic vinaigrette
Instructions
- Preheat oven to 350°F.
- Layer spinach, chicken, tomatoes and cheese in a baking dish. Top with dressing.
- Bake 20 to 25 minutes or until chicken is done.
Side Dish Ingredients
- 4 oz angel hair pasta
- 2 Tbsp butter
- ½ (5-oz) pkg spring mix
- 1 carrot, chopped
- 3 Tbsp balsamic vinaigrette
Side Dish Instructions
- Cook pasta according to package directions.
- Toss pasta with butter and salt and pepper to taste.
- Toss together spring mix, carrot and vinaigrette in a bowl.
