Spinach-Feta Florentine Chicken

Ingredients

  • ½ (5-oz) pkg baby spinach
  • ¾ lb boneless, skinless chicken breasts, cut in half lengthwise
  • ½ (10.5-oz) pkg grape tomatoes, cut in half (if desired)
  • ½ (4-oz) pkg crumbled feta cheese
  • ½ cup balsamic vinaigrette

Instructions

  1. Preheat oven to 350°F.
  2. Layer spinach, chicken, tomatoes and cheese in a baking dish. Top with dressing.
  3. Bake 20 to 25 minutes or until chicken is done.

Side Dish Ingredients

  • 4 oz angel hair pasta
  • 2 Tbsp butter
  • ½ (5-oz) pkg spring mix
  • 1 carrot, chopped
  • 3 Tbsp balsamic vinaigrette

Side Dish Instructions

  1. Cook pasta according to package directions.
  2. Toss pasta with butter and salt and pepper to taste.
  3. Toss together spring mix, carrot and vinaigrette in a bowl.
