Asian Grilled Chicken Salads

Ingredients

  • 1½ lb boneless, skinless chicken breasts, pounded to ½-inch thickness
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 1 (3-count) pkg romaine lettuce hearts, chopped
  • 1 (10-oz) pkg angel hair coleslaw mix
  • 2 red bell peppers, chopped
  • 2 Granny Smith apples, chopped
  • 1 seedless cucumber, chopped
  • 1 (15-oz) can mandarin oranges in light syrup, drained
  • ¾ cup light toasted sesame dressing

Instructions

  1. Preheat grill or grill pan to medium-high heat. Brush chicken with oil; sprinkle with salt and pepper.
  2. Grill chicken, covered with grill lid, 5 to 6 minutes per side or until done. Thinly slice chicken.
  3. Toss together lettuce, coleslaw, bell peppers, apples, cucumber, and oranges in a large bowl.
  4. Add dressing; toss. Divide among serving plates; top with chicken.

Side Dish Ingredients

  • 1 Tbsp toasted sesame oil
  • 1 Tbsp olive oil
  • 2 tsp Sriracha hot sauce (or use any hot sauce)
  • 18 (3½-inch) square wonton wrappers
  • ¼ tsp salt

Side Dish Instructions

  1. Preheat oven to 375°F. Whisk together sesame oil, olive oil and Sriracha; brush over both sides of wonton wrappers.
  2. Place wontons in a single layer on a large parchment paper-lined baking sheet; sprinkle with salt.
  3. Bake 8 to 10 minutes or until browned and crisp. Serve 3 wonton crisps per person.
