Asian Grilled Chicken Salads
Rice Crackers
Ingredients
- ½ lb boneless, skinless chicken breasts, pounded to ½-inch thickness
- 1 tsp olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (10-oz) pkg chopped romaine lettuce
- 1½ cups angel hair coleslaw mix
- 1 red bell pepper, chopped
- 1 Granny Smith apple, cored and chopped
- 1½ cups chopped seedless cucumber
- 1 (11-oz) can mandarin oranges in juice, drained
- ⅓ cup light toasted sesame dressing
Instructions
- Preheat grill or grill pan to medium-high heat.
- Brush chicken with oil; sprinkle with salt and pepper.
- Grill chicken, covered with grill lid, 5 to 6 minutes per side or until done. Thinly slice.
- Toss together lettuce, coleslaw, bell pepper, apple, cucumber, and oranges in a bowl.
- Add dressing; toss. Divide salad between serving plates; top with chicken.
