Asian Grilled Chicken Salads

Ingredients

  • ½ lb boneless, skinless chicken breasts, pounded to ½-inch thickness
  • 1 tsp olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 (10-oz) pkg chopped romaine lettuce
  • 1½ cups angel hair coleslaw mix
  • 1 red bell pepper, chopped
  • 1 Granny Smith apple, cored and chopped
  • 1½ cups chopped seedless cucumber
  • 1 (11-oz) can mandarin oranges in juice, drained
  • ⅓ cup light toasted sesame dressing

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Brush chicken with oil; sprinkle with salt and pepper.
  3. Grill chicken, covered with grill lid, 5 to 6 minutes per side or until done. Thinly slice.
  4. Toss together lettuce, coleslaw, bell pepper, apple, cucumber, and oranges in a bowl.
  5. Add dressing; toss. Divide salad between serving plates; top with chicken.
