Black Bean Burrito Bowls
Creamy Cilantro SauceIngredients
- 1 (8.8-oz) pkg microwavable brown rice
- ½ (16-oz) bag tortilla chips
- 2 cups chopped romaine lettuce
- 1 (15-oz) can black beans, drained
- 1 cup freshly shredded Monterey Jack cheese
- 1 avocado, sliced
- 1 green onion, chopped
- ½ cup refrigerated salsa
Instructions
- Cook rice according to package directions.
- Break chips. Layer chips, rice, lettuce, beans, cheese, avocado and green onions in 2 large serving bowls.
- Serve with salsa and Creamy Cilantro Sauce.

- ½ cup sour cream
- 2 Tbsp chopped fresh cilantro
- ¼ tsp ground cumin
- ½ Tbsp fresh lime juice
Side Dish Instructions
- Stir together sour cream, cilantro, cumin and lime juice.
