Parmesan-Broiled Flounder

Ingredients

  • 6 flounder fillets
  • ½ cup shredded Parmesan cheese
  • 3 Tbsp olive oil mayonnaise
  • 2 Tbsp sliced green onions
  • 1 Tbsp butter, softened

Instructions

  1. Preheat broiler.
  2. Pat fish dry with a paper towel; arrange fish on a greased broiler rack.
  3. Stir together cheese, mayonnaise, green onions and butter in a small bowl; spread evenly over fish.
  4. Lightly sprinkle fish with salt and pepper.
  5. Broil 8 to 10 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 4 slices natural, uncured bacon
  • 2 (8-oz) pkg trimmed green beans
  • 1 cup low-sodium beef broth
  • 1 (12-oz) jar roasted red peppers, drained and sliced

Side Dish Instructions

  1. Cook bacon in a large nonstick skillet until crisp; remove bacon to paper towels, reserving drippings in skillet.
  2. Crumble bacon.
  3. Add green beans, broth, and salt and pepper to taste to drippings in skillet.
  4. Cover and cook 8 minutes or until green beans are tender.
  5. Stir in peppers, and sprinkle with bacon before serving.
