One-Pan Cheeseburger Pasta
Chopped Salad
Ingredients
- 1 lb lean ground beef
- 1 cup diced yellow onion
- 1 Tbsp tomato paste
- ½ tsp dry mustard
- 1 (28-oz) can diced tomatoes
- 2 cups low-sodium beef broth
- 1 lb elbow macaroni
- 1 cup shredded sharp Cheddar cheese
Instructions
- Heat a large greased Dutch oven over medium heat; add ground beef and onion.
- Cook 5 minutes or until browned.
- Add tomato paste, mustard, diced tomatoes, broth, macaroni, 2 cups water, and salt and pepper to taste.
- Bring to a boil; cover, reduce heat to low, and simmer 12 minutes or until pasta is tender.
- Stir in cheese just before serving.
Side Dish Ingredients
- 1 (10-oz) pkg chopped romaine lettuce
- 1 pint grape tomatoes
- 1 English cucumber, sliced
- 2 Tbsp sliced green onions
- ⅓ cup refrigerated yogurt blue cheese or Ranch dressing
Side Dish Instructions
- Combine lettuce, tomatoes, cucumber and green onion in a serving bowl.
- Pour dressing over salad; toss to coat.
