Sausage, White Bean and Kale Stew

Ingredients

  • 1 Tbsp olive oil
  • ½ lb Italian sausage, sliced
  • 1 (8-oz) container chopped onion and celery
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • ½ (1-lb) pkg chopped kale
  • 2 cups low-sodium chicken broth

Instructions

  1. Heat oil in a Dutch oven over medium-high heat.
  2. Add sausage; cook 5 minutes or until browned.
  3. Remove from Dutch oven, and keep warm.
  4. Add onion and celery to Dutch oven; cook 3 minutes or until tender.
  5. Return sausage to Dutch oven; add beans, kale and broth.
  6. Bring to a boil; reduce heat, and simmer 10 minutes.
  7. Season with salt and pepper to taste.

Side Dish Ingredients

  • 1 (11-oz) pkg refrigerated breadstick dough
  • 2 Tbsp olive oil
  • 3 Tbsp shredded Parmesan cheese
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 375°F. Unroll dough; brush with oil.
  2. Sprinkle with cheese and pepper; twist each dough portion, and arrange on a baking sheet.
  3. Bake according to package directions.
