Sausage, White Bean and Kale Stew
Parmesan Breadsticks
Ingredients
- 1 Tbsp olive oil
- ½ lb Italian sausage, sliced
- 1 (8-oz) container chopped onion and celery
- 1 (15-oz) can cannellini beans, drained and rinsed
- ½ (1-lb) pkg chopped kale
- 2 cups low-sodium chicken broth
Instructions
- Heat oil in a Dutch oven over medium-high heat.
- Add sausage; cook 5 minutes or until browned.
- Remove from Dutch oven, and keep warm.
- Add onion and celery to Dutch oven; cook 3 minutes or until tender.
- Return sausage to Dutch oven; add beans, kale and broth.
- Bring to a boil; reduce heat, and simmer 10 minutes.
- Season with salt and pepper to taste.
Side Dish Ingredients
- 1 (11-oz) pkg refrigerated breadstick dough
- 2 Tbsp olive oil
- 3 Tbsp shredded Parmesan cheese
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 375°F. Unroll dough; brush with oil.
- Sprinkle with cheese and pepper; twist each dough portion, and arrange on a baking sheet.
- Bake according to package directions.
