Jerk Chicken with Mango Salsa

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 Tbsp avocado oil
  • 1½ Tbsp Jerk seasoning
  • 2 mangoes, pitted and chopped (see Note)
  • 1 red bell pepper, minced
  • 1 jalapeño pepper, seeded and minced
  • 2 Tbsp minced red onion
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp fresh lime juice

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Pound chicken to an even thickness; brush with oil, and sprinkle with seasoning.
  3. Place chicken on a grill rack; grill, covered, 5 to 6 minutes per side or until done.
  4. Toss together mangoes, bell pepper, jalapeño, red onion, cilantro and lime juice.
  5. Serve salsa over chicken.

Side Dish Ingredients

  • 1 large spaghetti squash
  • 1 Tbsp ghee
  • ¼ tsp ground cinnamon

Side Dish Instructions

  1. Cut squash in half. Place squash, cut sides down, in a microwavable dish.
  2. Cover with plastic wrap; cut a small slit in plastic wrap.
  3. Microwave at HIGH 8 to 12 minutes or until tender; let stand 10 minutes.
  4. Discard seeds from squash.
  5. Scrape squash with a fork to remove spaghetti-like strands.
  6. Place strands in a large bowl. Add ghee and cinnamon; toss.
  7. Season with salt and pepper to taste.
