Chicken with White Beans and Tomatoes
Creamy Cheese Grits and Steamed Green Beans
Ingredients
- 1½ lb boneless, skinless chicken breasts, halved crosswise
- 2 Tbsp olive oil
- 1 onion, chopped
- ½ Tbsp bottled minced garlic
- 2 (15.5-oz) cans great Northern beans, rinsed and drained
- 2 (14.5-oz) cans diced tomatoes with Italian seasoning
- 1 tsp Italian seasoning
- 2 Tbsp fresh lemon juice
Instructions
- Pound chicken to an even thickness; lightly season with salt and pepper.
- Heat oil in a large nonstick skillet over medium-high heat.
- Add chicken, and cook 4 minutes per side or until browned; remove from skillet.
- Add onion and garlic to skillet; cook 3 minutes.
- Stir in beans, tomatoes, and Italian seasoning.
- Return chicken to skillet, and cook 5 to 6 minutes or until chicken is done.
- Stir in lemon juice, and serve over grits.
Side Dish Ingredients
- 2 cups quick-cooking grits
- 1 (8-oz) pkg shredded Cheddar cheese
- 4 Tbsp butter
- 2 (12-oz) pkg frozen green beans
Side Dish Instructions
- Cook grits according to package directions.
- Stir in cheese, butter, and salt and pepper to taste.
- Cook green beans according to package directions. Season as desired.
