Chicken with White Beans and Tomatoes

Creamy Cheese Grits and Steamed Green Beans

Ingredients

  • 1½ lb boneless, skinless chicken breasts, halved crosswise
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • ½ Tbsp bottled minced garlic
  • 2 (15.5-oz) cans great Northern beans, rinsed and drained
  • 2 (14.5-oz) cans diced tomatoes with Italian seasoning
  • 1 tsp Italian seasoning
  • 2 Tbsp fresh lemon juice

Instructions

  1. Pound chicken to an even thickness; lightly season with salt and pepper.
  2. Heat oil in a large nonstick skillet over medium-high heat.
  3. Add chicken, and cook 4 minutes per side or until browned; remove from skillet.
  4. Add onion and garlic to skillet; cook 3 minutes.
  5. Stir in beans, tomatoes, and Italian seasoning.
  6. Return chicken to skillet, and cook 5 to 6 minutes or until chicken is done.
  7. Stir in lemon juice, and serve over grits.

Side Dish Ingredients

  • 2 cups quick-cooking grits
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 4 Tbsp butter
  • 2 (12-oz) pkg frozen green beans

Side Dish Instructions

  1. Cook grits according to package directions.
  2. Stir in cheese, butter, and salt and pepper to taste.
  3. Cook green beans according to package directions. Season as desired.
