Sheet Pan Fajitas
Jicama-Carrot Coleslaw
Ingredients
- 1¾ lb boneless, skinless chicken breasts (cut for fajitas)
- 2 (12-oz) pkg fajita vegetable mix
- 4 Roma tomatoes, cut lengthwise into wedges
- ¼ cup olive oil
- 3 Tbsp Mexican seasoning
- 2 (11.57-oz) pkg corn tortillas
- 2 limes, cut into wedges
Instructions
- Preheat oven to 425°F.
- Place a large rimmed baking sheet in oven to heat while oven preheats.
- Toss together chicken, fajita mix, tomatoes, oil and Mexican seasoning in a large bowl.
- Carefully spread mixture in a single layer on preheated baking sheet.
- Bake 20 minutes or until chicken is done and vegetables are tender.
- Serve in tortillas with lime wedges.
Side Dish Ingredients
- 1 (10-oz) pkg angel hair coleslaw
- 1 (10-oz) pkg matchstick carrots
- 1 jicama, peeled, and cut into matchsticks
- ½ cup mayonnaise
- ¼ cup chopped fresh cilantro
- 1 Tbsp fresh lime juice
- 1 tsp honey
Side Dish Instructions
- Combine all ingredients; toss.
- Season to taste.
