Sheet Pan Fajitas

Jicama-Carrot Coleslaw

Ingredients

  • 1¾ lb boneless, skinless chicken breasts (cut for fajitas)
  • 2 (12-oz) pkg fajita vegetable mix
  • 4 Roma tomatoes, cut lengthwise into wedges
  • ¼ cup olive oil
  • 3 Tbsp Mexican seasoning
  • 2 (11.57-oz) pkg corn tortillas
  • 2 limes, cut into wedges

Instructions

  1. Preheat oven to 425°F.
  2. Place a large rimmed baking sheet in oven to heat while oven preheats.
  3. Toss together chicken, fajita mix, tomatoes, oil and Mexican seasoning in a large bowl.
  4. Carefully spread mixture in a single layer on preheated baking sheet.
  5. Bake 20 minutes or until chicken is done and vegetables are tender.
  6. Serve in tortillas with lime wedges.

Side Dish Ingredients

  • 1 (10-oz) pkg angel hair coleslaw
  • 1 (10-oz) pkg matchstick carrots
  • 1 jicama, peeled, and cut into matchsticks
  • ½ cup mayonnaise
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp fresh lime juice
  • 1 tsp honey

Side Dish Instructions

  1. Combine all ingredients; toss.
  2. Season to taste.
