Grilled Buffalo Wings
Crudités with Paleo Ranch Dressing
Ingredients
- 4 lb chicken wings
- ¼ cup avocado oil
- 3 large cloves garlic, minced
- 1 tsp salt
- 1 tsp pepper
- ½ cup hot sauce
- ¼ cup ghee
- 2 Tbsp fresh lemon juice
Instructions
- Using a sharp knife, separate wings and drumettes. Cut off wing tips, and discard.
- Toss together wings, oil, garlic, salt and pepper in a large bowl.
- Cover and chill at least 2 hours or up to 2 days.
- Preheat grill to medium-high heat.
- Remove chicken from marinade; discard marinade.
- Grill wings, covered with grill lid, 20 to 25 minutes, turning occasionally, until chicken is done and skin is crisp.
- Meanwhile, heat hot sauce, ghee and lemon juice in a saucepan over medium heat, stirring often.
- Serve sauce with wings.
Side Dish Ingredients
- 1 large pasteurized egg, at room temperature (see Note)
- ¼ cup fresh lemon juice
- ½ tsp salt
- 1½ cups avocado oil
- 1 tsp dried dill
- ½ tsp onion powder
- ½ tsp garlic powder
- 1 lb carrots, cut into sticks
- 1 bunch celery, cut into sticks
- 1 pint grape tomatoes
Side Dish Instructions
- Process egg, 2 Tbsp lemon juice and salt in a blender until smooth.
- With blender running, slowly drizzle in oil through food chute.
- Stir in 2 Tbsp lemon juice, dill, onion powder and garlic powder.
- Serve dressing with wings, carrots, celery and tomatoes.
