Chicken and Sausage Pasta in Tomato Cream

Ingredients
- 1 (16-oz) pkg linguine
- 1 (14-oz) pkg smoked sausage, sliced
- 1 cup chopped onion
- 1 Tbsp olive oil
- 1½ lb boneless, skinless chicken breasts, cut into bite-size pieces
- 2 tsp Creole seasoning
- ½ cup low-sodium chicken broth
- 1 (28-oz) can fire-roasted crushed tomatoes
- ½ cup heavy cream
- 1 tsp sugar
- 1 (10-oz) pkg baby spinach
- ½ tsp salt
Instructions
- Cook pasta according to package directions.
- Meanwhile, cook sausage and onion in hot oil in a large skillet over medium-high heat 5 to 6 minutes or until sausage is browned. Remove from skillet, reserving drippings.
- Sprinkle chicken with Creole seasoning; add to skillet, and cook 5 to 6 minutes or until browned.
- Add broth; cook 2 minutes, scraping browned bits from bottom of pan with a wooden spoon.
- Stir in tomatoes, cream, and sugar; bring to a boil, reduce heat, and simmer 5 minutes.
- Gradually stir in spinach until wilted. Stir in sausage mixture and salt; cook 1 minute. Toss with hot cooked pasta.
Side Dish Ingredients
- 1 head Boston or bibb lettuce, torn
- 2 cups baby kale
- ½ cup sliced red onion
- 1 lemon, halved
- 2 pears, thinly sliced
- 2 Tbsp honey
- 1 cup walnuts, toasted
- ¼ cup balsamic vinaigrette
Side Dish Instructions
- Place lettuce, kale, and onion in a salad bowl.
- Squeeze juice from lemon.
- Toss pears with lemon juice and honey; add to salad with nuts. Toss with vinaigrette.
