Brussels Sprouts Breakfast Hash with Eggs

Ingredients
- 8 slices nitrite-free bacon
- 1 (10-oz) pkg frozen diced sweet potatoes
- 1 lb Brussels sprouts, sliced
- 2 cloves garlic, minced
- 8 large eggs
Instructions
- Cook bacon in a large ovenproof skillet over medium heat 6 to 8 minutes or until crisp.
- Remove from skillet, and crumble, reserving 2 Tbsp drippings in pan.
- Reduce heat to medium heat. Add sweet potatoes; cook 6 to 8 minutes or until tender and starting to brown, stirring occasionally.
- Add Brussels sprouts and garlic. Lightly sprinkle with salt and pepper.
- Cook 5 minutes or until Brussels sprouts are tender, stirring often.
- Form 8 indentations in potato mixture in skillet.
- Break 1 egg over each indentation.
- Cover and cook over medium heat 10 minutes or until eggs are set.
- Sprinkle with bacon; season to taste with salt and pepper.
