Brussels Sprouts Breakfast Hash with Eggs

Ingredients

  • 8 slices nitrite-free bacon
  • 1 (10-oz) pkg frozen diced sweet potatoes
  • 1 lb Brussels sprouts, sliced
  • 2 cloves garlic, minced
  • 8 large eggs

Instructions

  1. Cook bacon in a large ovenproof skillet over medium heat 6 to 8 minutes or until crisp.
  2. Remove from skillet, and crumble, reserving 2 Tbsp drippings in pan.
  3. Reduce heat to medium heat. Add sweet potatoes; cook 6 to 8 minutes or until tender and starting to brown, stirring occasionally.
  4. Add Brussels sprouts and garlic. Lightly sprinkle with salt and pepper.
  5. Cook 5 minutes or until Brussels sprouts are tender, stirring often.
  6. Form 8 indentations in potato mixture in skillet.
  7. Break 1 egg over each indentation.
  8. Cover and cook over medium heat 10 minutes or until eggs are set.
  9. Sprinkle with bacon; season to taste with salt and pepper.
