Ham, Broccoli and Potato Casserole

Ingredients

  • 1½ lb red potatoes, cubed
  • 2 Tbsp butter
  • ½ cup chopped onion
  • ½ (8-oz) pkg cream cheese, cubed
  • 1 (16-oz) pkg diced cooked ham, drained
  • 1 (14-oz) pkg frozen chopped broccoli, thawed
  • 1 (8-oz) carton sour cream
  • 1 tsp garlic salt
  • ½ tsp pepper
  • 1 cup shredded Italian blend cheese

Instructions

  1. Preheat oven to 350°F.
  2. Combine potatoes and water to cover in a large saucepan.
  3. Bring to a boil over medium-high heat; reduce heat, and simmer 10 minutes or until tender. Drain well.
  4. Melt butter in a large skillet over medium heat.
  5. Add onion; cook 6 minutes or until just tender. Add cream cheese, stirring until melted.
  6. Stir in ham, broccoli, sour cream, garlic salt and pepper. Remove from heat, and stir in potatoes.
  7. Spoon mixture into a lightly greased 13-x 9-inch baking dish; sprinkle with cheese.
  8.  Bake 30 minutes or until bubbly.
