Baked New Orleans "Barbecue" Shrimp

Ingredients

  • 1½ lb unpeeled, large raw shrimp, peeled and deveined (or use catfish, cut into 2-inch pieces)
  • 1 Tbsp olive oil
  • ¼ cup fresh lemon juice
  • 2 cloves garlic, minced
  • 3 Tbsp Cajun seasoning
  • 2 Tbsp soy sauce
  • ½ tsp hot sauce
  • ¼ tsp pepper
  • 1 lemon, thinly sliced

Instructions

  1. Preheat oven to 400°F. Place shrimp in a 13- x 9-inch baking dish.
  2. Combine oil and next 6 ingredients. Pour over shrimp; toss well.
  3. Bake 10 minutes or until shrimp turn pink; garnish with lemon slices.

Side Dish Ingredients

  • 2 heads cauliflower (about 3 lb), cut into florets
  • 3 Tbsp olive oil
  • 2 Tbsp milk
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 2 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Arrange cauliflower in a steamer basket over boiling water. Cover and steam 12 to 15 minutes or until tender.
  2. Transfer to a food processor; add 2 Tbsp oil, milk and garlic.
  3. Cover and pulse until smooth, scraping down sides as needed. Stir in ½ tsp each salt and pepper.
  4. Steam broccoli according to package directions; toss with 1 Tbsp oil and ½ tsp each salt and pepper.
