Baked New Orleans "Barbecue" Shrimp
Cauliflower Mash and Steamed Broccoli
Ingredients
- 1½ lb unpeeled, large raw shrimp, peeled and deveined (or use catfish, cut into 2-inch pieces)
- 1 Tbsp olive oil
- ¼ cup fresh lemon juice
- 2 cloves garlic, minced
- 3 Tbsp Cajun seasoning
- 2 Tbsp soy sauce
- ½ tsp hot sauce
- ¼ tsp pepper
- 1 lemon, thinly sliced
Instructions
- Preheat oven to 400°F. Place shrimp in a 13- x 9-inch baking dish.
- Combine oil and next 6 ingredients. Pour over shrimp; toss well.
- Bake 10 minutes or until shrimp turn pink; garnish with lemon slices.
Side Dish Ingredients
- 2 heads cauliflower (about 3 lb), cut into florets
- 3 Tbsp olive oil
- 2 Tbsp milk
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tsp pepper
- 2 (12-oz) pkg broccoli florets
Side Dish Instructions
- Arrange cauliflower in a steamer basket over boiling water. Cover and steam 12 to 15 minutes or until tender.
- Transfer to a food processor; add 2 Tbsp oil, milk and garlic.
- Cover and pulse until smooth, scraping down sides as needed. Stir in ½ tsp each salt and pepper.
- Steam broccoli according to package directions; toss with 1 Tbsp oil and ½ tsp each salt and pepper.
