Jerk Chicken Drumsticks
Black Beans with Cilantro and Brown Rice
Ingredients
- 3 lb skinless chicken drumsticks
- 2 Tbsp olive oil
- ¼ cup salt-free Jerk seasoning
- ½ tsp salt
- ½ tsp freshly ground pepper
- 3 limes, cut in half
Instructions
- Combine chicken drumsticks and oil in a jumbo zip-top plastic freezer bag.
- Add Jerk seasoning; seal bag, and shake to coat.
- Refrigerate overnight.
- Preheat grill to medium-high heat.
- Sprinkle chicken with salt and pepper; grill 15 minutes, turning occasionally, until chicken is done.
- Grill limes, with cut sides down, during last 5 minutes.
- Cut limes into wedges, and squeeze juice over chicken.
Side Dish Ingredients
- 1 cup brown rice
- ¾ tsp salt
- ¾ tsp freshly ground pepper
- 1 Tbsp olive oil
- 2 cloves garlic, minced
- ½ cup finely chopped onion
- 1 organic red bell pepper, chopped
- 2 (16-oz) cans no-salt-added black beans, drained and rinsed
- 1 (14.5-oz) can low-sodium chicken broth
- 2 Tbsp chopped fresh cilantro
Side Dish Instructions
- Cook rice according to package directions, adding ¼ tsp each salt and pepper.
- Heat oil in a saucepan over medium-high heat; add garlic, onion and bell pepper.
- Sauté 3 minutes or until tender; add black beans, broth, and remaining ½ tsp each salt and pepper.
- Bring to a boil; cover, reduce heat, and simmer 10 minutes.
- Stir in cilantro.
