Sausage and Tomato-Zucchini Breakfast Skillet

Ingredients

  • 1 Tbsp avocado oil
  • ½ lb lean turkey breakfast sausage
  • 1 cup finely chopped onion
  • 1 pint grape tomatoes
  • 1 large zucchini, halved and sliced
  • 2 cloves garlic, minced
  • 2 tsp dried oregano
  • ¼ tsp salt
  • ½ tsp pepper

Instructions

  1. Heat oil in a large nonstick skillet over medium heat. Add sausage and onion.
  2. Cook until sausage is browned, stirring to crumble, about 10 minutes. Drain, if needed.
  3. Add tomatoes, zucchini, garlic, oregano, salt and pepper to skillet; cook 3 to 4 minutes or until vegetables are tender.

Side Dish Ingredients

  • 1½ tsp white vinegar
  • 8 large eggs

Side Dish Instructions

  1. Fill a large skillet about two-thirds full with water; add vinegar.
  2. Bring to a boil. Reduce heat to a simmer.
  3. Crack 4 eggs into skillet about 2 inches apart; cook 3 minutes or to desired doneness.
  4. Remove eggs using a slotted spoon. Season with salt and pepper to taste.
  5. Repeat with remaining 4 eggs.
  6. Serve eggs alongside sausage breakfast.
