Thai Chicken Pizza
Mango and Pineapple with Yogurt Sauce
Ingredients
- 1 (16-oz) pkg (12-inch) prebaked whole wheat thin pizza crust
- ½ cup Thai peanut sauce
- 1 deli rotisserie chicken, skinned and shredded
- ½ cup matchstick carrots
- 1 (8-oz) pkg shredded part-skim mozzarella cheese
- ½ cup bean sprouts (see Note)
- 3 Tbsp chopped fresh cilantro
Instructions
- Preheat oven to 450°F.
- Place pizza crust on a pizza pan or large baking sheet; spread with ¼ cup peanut sauce.
- Toss chicken with remaining sauce.
- Top pizza with chicken, carrots and cheese.
- Bake 12 minutes or until cheese is melted; sprinkle pizza with bean sprouts and cilantro before serving.
Side Dish Ingredients
- 2 (6-oz) pkg sliced mango
- 1 cored pineapple, cut into spears
- 1 (5.3-oz) carton plain Greek yogurt
- 1 Tbsp honey
- ¼ tsp ground cardamom
Side Dish Instructions
- Combine mango and pineapple in a serving bowl.
- Stir together yogurt, honey and cardamom; spoon over fruit.
